
Serves approx. 4 people
Ingredients:
9 ounce bag baby spinach roughly chopped
8 ounces crumbled feta cheese
1 teaspoon chopped garlic
2 teaspoons chopped shallots
4 sheets filo dough
4 ounces olive oil
Salt and Pepper to taste
Instructions
Start by heating medium sized sauté pan then adding 1 ounce of olive oil then the garlic and shallot and sauté quickly for only a few seconds. Then add the spinach and sauté until wilted, then season with salt and pepper and cool. After spinach mixture is cooled add crumbled feta. Then brush 1st filo sheet with olive oil then stack another one on top and brush with olive oil. Then cut in half lengthwise and place one ¼ of feta and spinach mixture on bottom and fold up into a football triangle. Then repeat with other two sheets of filo and remaining mixture. Then place on baking sheet and place in pre-heated 425-degree oven and bake until golden brown approx. 8-10 minutes.
