Serves 2 people
Ingredients:
-2 firm tomatoes
-1/4 pound ground beef
-1/2 cup chopped onions
-2 tb of olive oil
-cheese
-salt and pepper
-chopped parsley
Ingredients for Sauce
-1 tomato chopped fine
-1 tb of olive oil
-1/2 cup of chicken stock
-2 tb of tomato paste
Directions:
1. Slice one end of both tomatoes and scoop out with spoon. Slice the tomato parts you scooped out.
2. Combine the beef, onions, olive oil, salt and pepper in pan and cook on medium to high for ten minutes. (or until beef is brown)
3. Then add the tomato you scooped from the two tomatoes. This is for the stuffing.
4. Combine the chopped tomato, olive oil, chicken stock, and tomato paste in pan and cook for about five minutes.
5. Put the stuffing mixture in the two tomatoes, put cheese on top, and put in the oven at 425 degrees for ten minutes.
6. Take out of the oven and cover with tomato sauce.
