3 T. fresh oregano
3 T. fresh thyme
1 -2 bay leaves
1 T. paprika (smoked, hot or sweet)
1 small white onion
4 cloves peeled garlic
1 - 2 t. chili paste
1/4 cup red wine vinegar
Place all ingredients in a food processor and puree.
While the motor is running, slowly stream in 1 cup oil.
Taste and season with salt and pepper.
2 lbs chicken breast
Cut chicken into bite size chunks. Divide the chimichurri sauce in half and save half for dipping.
Place chicken in a bowl with the other half of sauce.
Heat grill and grill the chicken pieces quickly. Serve with extra chimichurri.
Also good with shrimp and steak!
