Ingredients: 1 bag of "Enjoy Life"* semi-sweet chocolate chips
1 C dried cranberries (or the dried fruit of your choice)
1 C chopped pistachios (or the nut of your choice)
Melt the chocolate over very low heat on the stovetop. When the chocolate is almost completely melted, remove from heat and continue to stir until all of the chips have melted. Pour into a glass bowl and stir in the fruit and nuts. Using a small spoon (or melon baller) scoop out bite sized portions into the mini muffin cups. These will take about an hour to completely harden. They should be stored in an airtight container. They will keep longer in the refrigerator (about 7 days) but they don't usually last that long in my house.
