Traditional Irish stew with lamb and root vegetables - Fox 28: South Bend, Elkhart IN News, Weather, Sports

The traditional Irish Stew made with lamb and root vegetables is a great dish for St. Patrick's Day.  Serving it with homemade Irish Brown Bread and Irish Soda Bread really makes it authentic.  We used lamb raised by a local family. 

This will yield 8 Quarts of Irish Stew:

Here's the ingredients list:

• 2½ pounds of Lamb Stew Meat cut into 1 inch cubes
• 1 pound of potatoes, diced
• 6 oz of carrots, diced
• 6 oz of celery, diced
• 4 oz of rutabaga, diced
• 1¼ pound of onions, diced
• ¾ Tbs fresh rosemary, chopped
• ½ Tbs fresh thyme, chopped
• 1 Bay leaf
• ½ Tbs of Kosher salt
• ½ Tbs of black pepper
• 1½ Quarts of chicken stock
• ½ pound of roux
