Roasted Tomato and Garlic Soup

Serves 6 

Ingredients

  • 2 Oz Olive Oil
  • 6 Cloves Garlic (Whole)
  • 8 Roma Tomatoes (Halved)
  • ¾ Cup Spanish Onion (Chopped)
  • 3 Oz Butter or Margarine
  • 3 Oz Flour
  • 6 Large Basil Leaves (Chopped)
  • 16 Oz Tomato Juice
  • 8 Oz Heavy Cream
  • Salt & White Pepper To Taste

Directions

  1. Place garlic cloves and halved Roma tomatoes on a sheet pan. Brush with olive oil, sprinkle with salt, and roast in a 375 degree oven for 30 minutes. 
  2. In a heavy bottomed saucepot over medium heat, melt butter and sauté the onions until soft. Roughly chop the roasted garlic, and add to the saucepot. Stir in the flour to create a roux, cook the roux for a few minutes. 
  3. Add the tomato juice and stir well to combine. Simmer, stirring occasionally until the soup thickens. Add the cream and heat until soup is hot, check seasonings and adjust with salt and pepper if necessary. Garnish with chopped basil, and serve.
