Yogurt Parfaits with Granola - Fox 28: South Bend, Elkhart IN News, Weather, Sports

Ingredients for Granola

• 1/4 c. vegetable oil
• 2 c. old fashioned rolled oats
• 1/2 c. dried cherries
• 1/2 c flaked coconut
• 1/2 tsp. pure vanilla
• 2/3 c. wheat germ
• 1/2 cup honey
• 1/2 c. brown sugar
• 1 c. sliced almonds
• 1/4 cup sesame seeds
• 1/4 c. flax seeds

Directions for Granola

Spray non stick spray on a cookie sheet or line one with parchment paper. In a large
bowl starting with the vegetable oil place all ingredients in a bowl and stir well.
Spread out the granola mixture on the cookie sheet and bake in a 350 degree oven for
25 minutes. Take out of the oven and let this cool completely. Store this in an airtight
container for freshness.

Ingredients for Parfait

• 32 oz of plain yogurt
• 1 T. vanilla
• 1 banana, sliced
• 1 cup strawberries sliced
• fresh mint

Directions for Parfait

Take a parfait glass and place about 2 T. granola in the bottom. Spoon a little fruit on top
of that. Mix the yogurt and vanilla together and put some of the yogurt mixture on top of
the fruit. Repeat the layers and garnish with mint.
