3- 4 sweet potatoes, scrubbed and not peeled, microwaved until semi soft
1 cup plain nonfat yogurt
2 tablespoons chopped green onions
½ cup seedless cucumber, peeled and chopped
1 teaspoon fresh minced garlic
¼ cup feta crumbles
¼ tsp kosher salt
2 tablespoons chopped fresh mint
Black pepper to taste
Mix all dressing ingredients thoroughly, cover and refrigerate for 30 minutes.
Slice sweet potatoes into wedges.
Brush grill with olive oil. Heat grill to medium-high heat. Place potato wedges on to grill and cook turning once until slightly browned and crisp.
Serve potatoes with dressing.
