1 10 ounce jar apricot preserves
2 tbls soy sauce
1 tbls lemon juice
2 garlic cloves, minced
2 (1 pound) pork tenderloins, trimmed and cut into 1 inch pieces
3/4 tsp. salt
3/4 tsp. freshly ground pepper
16 Wooden 8 inch skewers
Preheat grill to medium high heat.
For Marinate: Heat apricot preserves in a pan on the grill (or in the microwave) for 2-3 minutes. Remove from grill and stir in soy sauce, lemon juice, and garlic. Place 3/4 cup apricot mixture in a large zip top bag. Reserve remaining apricot mixture. Add pork to bag and seal. Marinate at room temperature for 30 minutes. Remove pork from bag and discard bag with marinade.
Thread pork evenly onto skewers. Sprinkle with salt and pepper. Set aside 1/4 cup apricot mixture. Place pork on grill rack coated with cooking spray. Baste with half of remaining apricot mixture.
Grill 3-4 minutes and turn pork over, baste with remaining apricot mixture. Grill another 3-4 minutes, or until desired doneness.
Remove pork from grill. Brush with reserved 1/4 cup apricot mixture.
