30,000 paczkis baked at one Michiana facility before Fat Tuesday

Paczkis definitely put the FAT in Fat Tuesday, but Martin's Bakery goes one better.  They finished their order of nearly 30,000 paczkis on Monday.

Annette Karmolinski is the assistant manager of Martin's Bakery in Mishawaka. She says the day before Fat Tuesday, it's crazy busy. You would be busy, too, if you had to make over 30,000 paczkis!

Karmolinski says Martin's Bakery gets going early Monday morning to get ready for Fat Tuesday, After all, they have more 2,400 dozen of paczkis to produce. 

To learn more about how Martin's gets the job done, Karmolinski walked me through the journey. So, what does it take to become a Fat Tuesday Paczki?

Bakers start their day at 2:00AM by making the dough.  That then gets pushed through a cutting machine. "They'll put them into the proof box, which they spend about a half an hour in there until they rise to the perfect shape and size," says Karmolinski.

From there, the little guys fall into a fryer, and for the perfect paczki, the machine even flips the donuts automatically. The donuts then run through a shower of glaze, before traveling to a complete spiral system that cools them.  Once the donuts make it all the way to the top, the paczkis fall in line for their last and final step: filling! The Karmolinski says it normally takes about twelve to fourteen hours to complete their 30,000 paczki order.
