Stir-Fry on a Budget


1 small onion

1 green pepper

2 zucchini

2 carrots

½ lb fresh pea pods

Mushrooms - optional

Bottle of Italian Salad dressing


2 T cornstarch

Soy sauce

1 lb of boneless chicken breast, or strips of pork, turkey or beef

Instead of vegetables 1 16-ounce bag frozen stir fried vegetables


  • 1. Cut meat in strips and marinate 15 minutes to 1 hour in 1/3 cup salad dressing and 2 T. soy sauce
  • 2. Peel and thinly slice onion
  • 3. Wash all vegetables, core, trim ends and thinly slice


  • 1. Drain the meat from the marinade
  • 2. Heat 2 tablespoon of oil on medium high heat, when skillet is hot add the drained meat strips and toss in the skillet. Cook until almost done, remove from skillet and keep warm.
  • 3. Now add the onions, peppers, and zucchini and cook until just tender.
  • 4. Add the tender vegetables like the pea pods last and again cook till just tender
  • 5. Now add the meat back and toss together
  • 6. If you want a glaze to the mixture mix 2 T cornstarch with 2 T soy sauce or salad dressing, stir together and pour over the mixture and heat.
  • 7. Serve alone or with cooked rice or fried rice
