Spiced Apple Turkey Cutlet



2ea Turkey breast Cutlet

 1 cup Cider Sage Brine



2 oz Fine Corn meal

2oz Clarified Butter  

 2oz Apple slice

 2oz Grilled squash

1oz Caramelized Fennel

Riesling deglaze (as needed)

.5oz Dried cranberries

3oz Butter whole

.5oz  Pepin as pumpkin seeds

  • 1. Remove Turkey from brine and rinse, pat dry.
  • 2. Season with salt & Pepper
  • 3. Lightly dust with corn meal (leave turkey in cornmeal till cooking)
  • 4. Heat clarified butter in sauté pan and place cutlets in pan.
  • 5. Sauté on both sides and remove, place in pre heated oven to finish.
  • 6. Add fennel to hot sauté pan and allow to begin carmilization, when this has begun add apple and squash. Allow to cook for slightly and deglaze with Riesling wine.
  • 7. Allow this to reduce by 1/4th and work in whole butter to finish.
  • 8. Season taste adjust
  • 9. This dish could be served with sweet potato and Riesling wine.
