2 lbs. of Chorizo
1 large Spanish onion--chopped
1 large chopped jalapeno or smaller to taste
2 cloves garlic--diced
Canned black beans--2 large or 3-4 smaller cans
2 cans diced tomatoes
2 Cups V8 or tomato juice
6 tsp. chili powder
1 1/2 to 2 tsp Cumin
1 1/2 tsp. oregano
Salt & pepper to taste
In a large pot, break up Chorizo and begin to cook. About halfway through cooking, add onion then jalapeno when almost done add garlic. Add all remaining ingredients and let simmer. Season to taste and let cook to reduce some liquid and let flavors blend.
