
8 oz turkey meat pulled
½ cup chopped onion
¼ cup chopped garlic
½ tbs. paprika
1 tsp. ground cumin
1 tsp. fresh oregano
1 tsp. fresh thyme
1 tsp. ground black pepper
½ tsp Dijon Mustard
1 egg
1 tblsp Cream
2 tsp. cayenne (optional)
Combine seasonings in a large bowl and mix well. Toss with one half the turkey meat until thoroughly coated. Add the egg and cream. Then grind the mixture in a food processor. Add remaining turkey. Wrap mixture tightly in plastic wrap or in leftover turkey skin and then plastic wrap. You can also use bacon as a wrap. Lightly poach in chicken broth. If you use bacon, fry a bit after removing from poaching to brown.
