Meatballs with Pancetta and Shaved Pecorino



- 8 oz sweet Italian Sausage

- 8 oz ground top round

- 8 oz pancetta, shredded

- 1/2 cup unseasoned bread crumbs

- 1/2 cup ricotta cheese

- 1 tablespoon dry English mustard

- 2 egg yolks

- Kosher salt, to taste

- white pepper, to taste

- 1 large can organic marinara sauce

- shaved pecorino cheese, to taste

Method of Production:

- Combine first 9 ingredients

- Form mixture into medium meatballs

- Bake at 350 degrees for 20 minutes

- Remove from oven and cover with marinara sauce

- Lower heat to 225 degrees and bake additional 40-50 minutes

- Remove from oven and correct seasoning

- Serve immediately with shaved pecorino cheese
